Idaho Two Bean Chowder

Ingredients

 

  • 1 cup of dry 1000 Springs Mill organic Great Northern Beans
  • 1 cup of dry 1000 Springs Mill organic Red Beans
  • 2 quarts of water
  • 1 ham hock
  • 1 cup chopped onion
  • 1 clove of minced garlic
  • ¾ cup diced celery
  • ¾ cup died carrot
  • ¼ teaspoon crushed red pepper
  • 1 ½ cups milk

    Instructions

    Soak beans in water overnight. Rinse thoroughly. Add ham hock and water to beans, cover and simmer 1 ½ hours. Remove ham hock and cut up meat. Mash a portion of the beans. Return meat to soup. Add onion, garlic, celery, carrot and crushed red pepper. Cover and simmer 1 hour. Add milk and heat. Season to taste with salt and pepper.
