Fast & Easy Black Beans
Ingredients
- 1 cup 1000 Springs Mill black beans
- 2 Tbsp of homemade or store bought sofrito
- 4 cups of chicken broth¹
- 2 bay leaves
- 1 Tbsp cilantro, chopped
- juice from 1/2 a lime
Notes
- Substitute with vegetable broth to make this a vegan dish
Instructions
Method 1: Pressure Cooker
- Add the beans, sofrito, chicken broth, and bay leaves together in your pressure cooker.
- Cook on high heat for 30 minutes — let the steam naturally release before opening.
- Strain the beans before adding the lime juice.
- Garnish with cilantro, serve and enjoy!
Method 2: Stovetop
- Soak the black beans overnight in water, drain before cooking.
- In a large pot, combine the beans and chicken broth together and bring to a boil.
- Cover the beans and reduce to a simmer, add in the bay leaves and sofrito, then allow them to cook until they are tender but firm, approx. 60-90 minutes.
- Periodically try to taste test and mash a bean against the side of the pot with a fork.
- Once fully cooked, strain off any extra broth before adding the lime juice.
- Garnish with cilantro, serve and enjoy!
