Fast & Easy Black Beans

Ingredients

  • 1 cup 1000 Springs Mill black beans
  • 2 Tbsp of homemade or store bought sofrito
  • 4 cups of chicken broth¹
  • 2 bay leaves
  • 1 Tbsp cilantro, chopped
  • juice from 1/2 a lime

Instructions

Method 1: Pressure Cooker

1.) Add the beans, sofrito, chicken broth, and bay leaves together in your pressure cooker.

2.) Cook on high heat for 30 minutes — let the steam naturally release before opening.

3.) Strain the beans before adding the lime juice.

4.) Garnish with cilantro, serve and enjoy!

 

Method 2: Stovetop

1. ) Soak the black beans overnight in water, drain before cooking.

2.) In a large pot, combine the beans and chicken broth together and bring to a boil.

3.) Cover the beans and reduce to a simmer, add in the bay leaves and sofrito, then allow them to cook until they are tender but firm, approx. 60-90 minutes.

4.) Periodically try to taste test and mash a bean against the side of the pot with a fork.

5.) Once fully cooked, strain off any extra broth before adding the lime juice.

6.) Garnish with cilantro, serve and enjoy!

¹ Substitute with vegetable broth to make this a vegan dish
