Preparation time: 10 minutes
1 ¼ cup almond milk
1 vanilla bean OR 1 tsp vanilla extract
¼ cup BARLEYmax™ flakes
¼ cup quinoa flakes
1 Tbsp flaxseeds
1 Tbsp chia seeds
2 Tbsp pistachios (without shells!)
1-2 fresh figs
Honey to garnish
1.) Pour the milk into a small saucepan.
2.) Slice the vanilla bean in half and scrape the seeds into the milk. Add the BARLEYmax™ flakes and quinoa flakes.
3.) Warm the mixture over a medium heat until it starts to gently boil, stirring constantly.
4.) Add the flaxseeds and chia seeds and stir to combine.
5.) Reduce the heat to low and stir until the porridge thickens.
6.) Serve immediately with the pistachios, sliced figs and honey drizzled over the top.
¹ For a flavor variation, try using coconut milk in place of almond, and add 2 Tbsp shredded coconut
